Forage and Feast

Last weekend we were truly blessed in so many ways for our Walk, Forage and Glamp weekend on the beautiful North Norfolk Coast.

Simon Hunter Marsh is a local chef and Norfolk Food Hero passionate about sourcing and cooking with the best local produce accompanied by foraged finds from mother natures pantry. His partner Kate has extensive knowledge of the holistic values of foraging. So boy! were we all in for an absolute treat.

The weather was perfect for a day of foraging on the Saturday and we were all very keen to learn and explore the surrounding area. Simon and Kate really do know their stuff and we didn’t have to go far at all (in fact for the first 30 minutes we didn’t leave the campsite hedgerows!) as we were surrounded by edible flora and fauna.

Kate brewed up a hedgerow tea for us all to enjoy before heading out onto the saltmarshes to see what we could find and learn. Now this was exciting, although pretty muddy after a rather high tide!

Guests arrived back to camp so enthusiastic with buckets full of foraged finds from seaweeds, samphire, ‘Stookey Blue’ cockles and winkles complete with very muddy boots and feet (all part of the fun).

 

 

 

The rest of the afternoon was spent cleaning and preparing the foraged finds with Simon or being treated to a holistic massage by Kate.

 

 

 

 

 

What a feast Simon had planned for us all that evening.

Lobster and Cromer crab freshly caught that morning plus the foraged cockles lightly steamed in a white wine and flavoured oil from Crush foods with wild spinach was for starters.

 

Local beef char grilled to absolute perfection which melted in your mouth, accompanied by the most amazing wild spinach and Fruitpig black pudding mousse, samphire, seaweed and a mouthwatering foraged sauce of the local berries.

 

Dessert was a de-constructed apple and blackberry crumble from the fruits foraged only a few hours ago.

 

 

 

With the fire pits lit, the wine flowing and delicious food, the evening was perfect and one we will all remember.

Making memories together

After a very good nights sleep under canvas our guests were treated to a Sunday brunch of homemade scones with cream and a foraged compote of berries, local kipper mouse and sourdough toast, followed a full fry up of local sausages, The Fruitpig Company black pudding, smoked streaky bacon, wild spinach omelette, mushroom and Norfolk free range eggs.

 

 

 

 

 

You never know exactly how a new working collaboration is going to work. We knew that we all shared the same values and all our main aims was to give our guests the best possible experience.

Well where do we start? from the luxury tent with wonderful touches, brilliant welcome by Gin and Mark on our first night with delicious Norfolk food for supper. Our second day, we set off over the Stiffkey marshes with Simon and Kate to forage for our supper. We found ingredients for our ‘energy tea’ to sustain us for our foraging. Then we set out and collected mushrooms, elderberries, blackberries, sea spinach, cockles and winkles and samphire and brought them back to the camp where Simon put together a truly delicious feast of lobster, steak and foraged food. We had a wonderful massage each from Kate before supper and have been glowing ever since! 

All in all it was the best camping/glamping we’ve ever had – so comfortable. Thank you to Gin, Mark, Simon and Kate and of course Brylie……..we’ll be back!”
